I recently asked on my Instagram Stories for your hot takes on brownies. More cake-y? Not brownie fans? The richer the better?
Personally, I’m not a massive fan of heavy chocolate vibes… and I find brownies to be a touch overrated (though I do love them in some ice cream). To my, I guess not surprise, but, not only do you like brownies, you like them rich! Since I knew we needed something chocolate for this toaster oven baking series, I’ve answered your rich chocolate-loving desires with this small batch toaster oven brownie recipe.

TOASTER OVEN BROWNIES


Yields: 6 brownies
Equipment:
Ingredients:
6 tbsp unsalted butter
¾ cup brown sugar
9 tbsp unsweetened cocoa powder
¼ tsp salt
2 egg yolks
¼ cup all-purpose flour
2 ½ tbsp mini chocolate chips, optional but recommended
Directions:
Preheat toaster oven to 325°F
In a small microwave-safe bowl, melt butter (about 30–40 seconds)
Stir in cocoa powder, brown sugar, and salt until well combined and glossy
Whisk in egg until smooth and shiny
Fold in flour just until no dry streaks remain—don’t overmix. Stir in chocolate chips if using
Place six regular-sized paper muffin cups on your toaster oven’s baking sheet. Split the brownie batter between them
Bake for 22 - 24 minutes, rotating the pan halfway
Remove and leave to cool for at least 30 minutes, to allow the brownies to set
Eat as is or served with a scoop of ice cream and enjoy!
