For the longest time, when I thought of coffee cake, I thought of this coffee cake. It was a rare bake in our house growing up, as my mom was the baker and, unfortuantely, she’s not a cherry lover.
Personality flaw, I know, but we love her anyway.
This cherry coffee cake is simple to make and so soft and tender to eat. While some coffee cake can lean drier (hence the need for a coffee/tea with it), not this baby.
Everything is in a layers: a soft vanilla coffee cake base, homemade cherry filling, and a softly sweet crumb topping.
You can make this with fresh or frozen cherries, and if you’re lucky enough to have an abundance of fruit, you can even make the filling in advance for coffee cake today, tomorrow, and months from now!
